Not stone, but clay! Merchants like Ea-nāṣir (see more here) went to school and learned to write, just as we do today. At this time, the writing system used clay and a stylus, so the material was malleable. We know they had wax tablets, too. This tablet and stylus technology is as old as writing itself.
How they used clay seems remarkably similar to how we treat paper. And just like today, not everyone was great at math.
